Sustainable M&E: sustainable business models: translating and operationalising sustainability principles into concrete entrepreneurial practices
keine

This course applies sustainable business model design to a real-world, practice-oriented case study. Utilising Unity Cuisine Lüneburg, an intercultural social initiative incubated under Enactus Lüneburg, with the support of stakeholders such as Utopia, Mosaiq etc, students investigate how to transition a project from its conception phase to a fully implemented market-ready venture [unity-cuisine.org]. Unity Cuisine blends sustainable cooking classes, community network building, and the economic integration of individuals from underrepresented backgrounds. Backed by nearly €8,000 in early-stage funding, the current strategic challenge is moving from ideation to operational market exploration and ecosystem expansion. Students examine these management challenges across three highly integrated strategic tracks, with different teams leading each focus:
- Environmental dimension ie., Sourcing sustainable supply chains, healthy cooking practices, managing zero-waste metrics.
- The Social impact dimension ie., designing inclusive governance models, mitigating newcomer barriers, and building trust networks with regional stakeholders.
- The Financial viability dimension ie., architecting self-sustaining B2B and B2C revenue streams, identifying market segments, and creating tri-profit financial projections.

Field research activities bridge the classroom with the local ecosystem. These include fieldwork across Lüneburg and workshop conducted directly at the Utopia Lüneburg innovation space, utilising their creative design environments for collaborative prototyping.

What’s in it for you?
- This course offers a hands-on incubator environment where your business expertise directly impacts a live, local social enterprise [unity-cuisine.org].
- Operationalise Sustainability Theory: Translate the triple bottom line from an abstract academic concept into concrete business strategies.
- Master 0-to-1 Venture Creation: Tackle real-world market-entry challenges, including stakeholder recruitment and B2B pipeline development.
- Develop Consulting & Prototyping Skills: Learn to facilitate agile interventions, design low-fidelity experiments, and pitch strategic recommendations.
- Build Regional Impact Portfolios: Work directly alongside established local networks like Enactus, Utopia, and regional NGOs to generate tangible community value.

Intended Learning Outcomes (ILOs)
Professional Skills
1. Analyse sustainable venture - Learn how organisations creates financial, environmental and social value.
2. Conduct field fesearch- Develop practical skills in mapping a local community ecosystem and conducting qualitative market research with corporate targets, supply networks, and civil society.
3. Apply Iterative Project Testing- Learn how to formulate real-world business assumptions, design validation experiments, and adapt strategy based on direct community and market evidence.
4. Strategy designing- learn how to synthesise complex operational data into a concrete Business Model Implementation Plan

Course Format & Group Dynamics
This module is run as an action-oriented, collaborative innovation lab. It is built for students who are excited about active teamwork and are highly motivated to collaborate intensely in groups. Because we are solving real-world challenges for a live initiative, this course requires hands-on participation. Students should be enthusiastic about stepping out of the classroom to conduct active fieldwork.

Please note: Students will act as strategic business architects. You will not be cooking or delivering live cooking classes yourselves, but rather building the operational blueprint to make them happen.
